Ingredients
For the Ice Cream Base:
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 vanilla bean (or 2 tsp vanilla extract)
5 large egg yolks
Pinch of salt
For the Strawberry Swirl:
1 1/2 cups fresh strawberries, hulled and chopped
1/4 cup granulated sugar
1 tbsp lemon juice
Instructions
Prepare the Vanilla Bean Ice Cream Base:
In a saucepan, combine the heavy cream, whole milk, and 1/2 cup of sugar.
Split the vanilla bean lengthwise and scrape the seeds into the cream mixture. Add the bean pod as well.
Heat the mixture over medium heat until it starts to simmer, then remove from heat. Let it steep for about 15 minutes to infuse the vanilla flavor.
In a separate bowl, whisk the egg yolks with the remaining 1/4 cup sugar until thick and pale.
Slowly whisk in about 1/2 cup of the warm cream mixture into the egg yolks to temper them.
Gradually whisk the tempered yolks back into the saucepan with the rest of the cream mixture.
Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon (about 170°F/77°C). Be careful not to let it boil.
Remove the vanilla bean pod and strain the custard through a fine-mesh sieve to remove any lumps.
Chill the custard in the refrigerator for at least 4 hours or overnight.
Prepare the Strawberry Swirl:
In a small saucepan, combine the chopped strawberries, sugar, and lemon juice.
Cook over medium heat, stirring frequently, until the strawberries break down and the mixture thickens (about 10 minutes).
Let the strawberry mixture cool completely, then refrigerate.
Churn the Ice Cream:
Once the vanilla custard is fully chilled, churn it in an ice cream maker according to the manufacturer’s instructions (usually 20-25 minutes).
When the ice cream is nearly done, spoon in the strawberry mixture a little at a time to create a swirl effect, or gently fold it into the churned ice cream.
Freeze and Serve:
Transfer the churned ice cream to an airtight container and freeze for at least 4 hours or until firm.
Scoop and serve, garnishing with fresh strawberries if desired.

This creamy, dairy-free ice cream features a rich butter pecan swirl, perfect for a decadent treat that’s also plant-based!
Ingredients
For the Ice Cream Base:
1 can (13.5 oz) full-fat coconut milk
1 cup almond milk (or any plant-based milk)
¾ cup coconut cream (for extra creaminess)
½ cup pure maple syrup or agave syrup
½ cup coconut sugar or brown sugar
1 tablespoon vanilla extract
For the Butter Pecan Swirl:
1 cup pecans, roughly chopped
2 tablespoons vegan butter or coconut oil
¼ cup brown sugar
1 tablespoon maple syrup
Instructions
Prepare the Butter Pecan Swirl:
Melt Butter: In a skillet over medium heat, melt the vegan butter or coconut oil.
Toast Pecans: Add the chopped pecans and cook, stirring frequently, until they become fragrant and slightly toasted, about 3-4 minutes.
Add Sweeteners: Stir in the brown sugar and maple syrup. Continue to cook, stirring until the sugar has melted and the pecans are coated. Set aside to cool.
Prepare the Ice Cream Base:
Combine Ingredients: In a large mixing bowl, combine the coconut milk, almond milk, coconut cream, maple syrup, coconut sugar, and vanilla extract.
Whisk: Whisk the mixture until well combined and the sugars are dissolved.
Churn the Ice Cream:

Fold In: Once the ice cream is churned to a soft-serve consistency, gently fold in the cooled butter pecan mixture. If your ice cream maker allows, you can add the pecans during the last few minutes of churning.

Freeze:
Freeze: Transfer the ice cream to a lidded container and freeze for at least 4 hours or until firm.

Ingredients
2 cups heavy whipping cream
1 (14 oz) can sweetened condensed milk
8 oz cream cheese (softened)
1 cup ripe bananas (mashed, about 2 large bananas)
1 teaspoon vanilla extract
1 cup crushed vanilla wafers
1/2 cup banana pudding mix (instant)
1/2 cup milk
Extra vanilla wafers (for topping, optional)
Instructions
Start by making the banana pudding: In a medium bowl, whisk together the banana pudding mix and milk until thickened. Set it aside to firm up while you prepare the other ingredients.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy. This should only take a minute or two, and it’s key to making sure your ice cream is silky smooth.
Add the sweetened condensed milk and vanilla extract to the cream cheese, mixing until fully combined. Then, fold in the mashed bananas. This is where the magic starts to happen—the flavors are already irresistible!
In a separate bowl, whip the heavy cream to stiff peaks using a hand mixer or a stand mixer. This is what gives your ice cream its luscious, airy texture.
Gently fold the whipped cream into the banana-cream cheese mixture until fully combined. Be careful not to deflate the whipped cream too much—gentle folding is key here!
Layer the ice cream mixture into a 9x5 inch loaf pan, alternating with dollops of the prepared banana pudding and sprinklings of crushed vanilla wafers. You want to create beautiful swirls and layers of flavor throughout the ice cream.
Top with extra crushed vanilla wafers, if you’d like an added crunch in every bite. Cover the pan tightly with plastic wrap and freeze for at least 6 hours, or until firm.
When you’re ready to enjoy, let the ice cream sit at room temperature for a few minutes to soften slightly before scooping. The wait will be worth it, I promise!
