Filling: Beat heavy cream, caramel sauce, powdered sugar, and vanilla until stiff peaks form.
Unroll cooled cake. Spread with caramel cream, then dot with cherry filling.
Gently roll back up. Chill at least 1 hour.

180g butter
1 cup heavy cream
½ to 1 teaspoon salt flakes
For the Dark Chocolate Ganache:
300g dark chocolate, chopped
350ml heavy cream
For the Salted Caramel Buttercream:
375g butter, room temperature
3 cups sifted icing sugar
1 ½ cups salted caramel (from the above recipe)
 𝗜𝗻𝘀𝘁𝗿𝘂𝗰𝘁𝗶𝗼𝗻𝘀 
1. Prepare the Chocolate Fudge Cake:
Preheat oven to 180°C (350°F).
Grease, flour, and line the bases of two 20cm (8 inch) cake pans with baking paper.
In a large mixing bowl or stand mixer, beat the butter, caster sugar, and vanilla until light and fluffy.
Add the eggs one at a time, beating well after each addition.
In a separate bowl, mix the cocoa with hot water until it forms a thick paste, then gradually add this to the butter mixture.
Add vinegar to the milk to sour it.
Sift together flour, baking powder, and bicarbonate of soda in another bowl.
Alternately add the flour mixture and the milk to the butter mixture, starting and ending with the flour. Fold until fully combined.
Divide the batter evenly between the prepared pans and bake for 23 minutes, or until a skewer inserted into the center comes out clean.
Cool the cakes in the pans for 10-15 minutes before turning out onto a cooling rack to cool completely.
Bake the remaining batter in the re-prepared pans if needed.
2. Make the Salted Caramel:
In a heavy-bottomed saucepan, add the caster sugar and brown sugar. Stir occasionally until the sugars melt and become smooth.
Add the butter and whisk until melted and combined.
Remove from heat and slowly pour in the heavy cream, stirring continuously.
Return to heat and allow the mixture to boil for 1 minute.
Remove from heat and stir in the salt. Allow to cool before using.
3. Make the Dark Chocolate Ganache:
In a large microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring after each interval until smooth.
Add the heavy cream and stir until the mixture is smooth. Allow to cool slightly; the ganache should be pourable but not hot.
4. Make the Salted Caramel Buttercream:
Beat the butter until light and fluffy.
Sift in the icing sugar and beat well.
Add 1 ½ cups of the cooled salted caramel and mix until well combined.
Refrigerate for 10 to 15 minutes until the buttercream is slightly firmer and pipeable.
5. Assemble the Cake:
Place one layer of the chocolate fudge cake on a serving plate or cake board.
Fill a large piping bag fitted with a large open tip with salted caramel buttercream. Pipe a border of large ‘kisses’ around the edge of the cake.
Using an offset spatula, fill in the interior created with the buttercream, then spoon a generous amount of salted caramel sauce over the top.
Repeat with remaining cake layers, alternating salted caramel sauce and dark chocolate ganache.
Top with more piped kisses and pour over the ganache, using an offset spatula to encourage it to drip over the sides.

Preheat the Oven
   Preheat your oven to 375°F (190°C). Line a jelly roll pan (or a baking sheet with sides) with parchment paper, making sure the paper extends up the sides.
Prepare the Chocolate Cake Roll
   In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  In a large bowl, beat the eggs and granulated sugar until thick and pale. Add vanilla extract.
   Gently fold the dry ingredients into the egg mixture until just combined.
   Spread the batter evenly in the prepared pan.
   Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
   Immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Roll the cake up with the towel while still warm. 
Prepare the Caramel Cream Filling
 Whip the heavy cream until soft peaks form.
   In another bowl, combine caramel sauce, mascarpone cheese, and powdered sugar until smooth.
   Gently fold the whipped cream into the caramel mixture. Then fold in the chopped cherries.
Assemble the Cake Roll
   Unroll the cooled cake carefully. Spread the caramel cream filling evenly over the cake.
   Re-roll the cake without the towel and place it seam-side down on a serving plate.
Prepare the Chocolate Ganache
    Heat the heavy cream in a small saucepan until it just begins to simmer.
    Pour the hot cream over the chopped chocolate. Let it sit for a minute, then stir until smooth and glossy.
Finish the Cake
   Pour the ganache  the rolled cake, spreading it evenly with a spatula.
   Garnish with whole cherries on top. Optionally, dust with powdered sugar before serving.
Chill and Serve
   Refrigerate the cake until the ganache is set.

Ingredients

Cherry Filling:

400 g jarred cherries in juice (pitted and chopped)

250 g water or jar juice (divided)

95 g starch/flour

315 g granulated sugar

Pinch of salt

½ lemon, juiced

60 g kirsch (cherry liqueur)

1 drop purple food gel (optional)

2 drops red food gel (optional)

Simple Syrup:

125 g boiling water

105 g granulated sugar

40 g kirsch

Chocolate Sponge Cake:

150 g cake flour

50 g Dutch processed cocoa powder (sifted)

½ tsp baking powder

3 g salt

10 large eggs (room temperature and divided)

½ tsp cream of tartar

210 g caster sugar (divided)

60 g warm water (just above room temperature)

7 g vanilla extract

12 fresh cherries or maraschino cherries (for decoration)

Chantilly Cream:

375 g heavy cream (cold)

65 g powdered sugar (sifted)

375 g mascarpone cheese

7 g vanilla bean paste or vanilla extract

20 g kirsch (optional)

Decorations:

200 g chocolate curls

½ batch Chocolate Sauce

Instructions

1. Cherry Filling:

Mix Corn Starch Slurry: In a medium bowl, whisk 200 g of cherry juice (or water) with 95 g starch/flour until combined. If using water, add food color (optional) and mix.

Prepare Cherries: Chop cherries and add half to a large saucepan with 315 g sugar, cherry juice (or water), ½ lemon (juiced), and salt. Reserve the other half of the cherries. Stir and bring to a boil. Lower heat and simmer for 3 minutes.

Finish Cooking: Add the starch mixture and optional food gel. Stir until glossy and thickened. Stir for another 2 minutes. Turn off heat, add the remaining cherries and 60 g kirsch. Stir, transfer to a bowl, cover, and let cool. Can be made up to 5 days in advance.

2. Simple Syrup:

Combine 125 g boiling water and 105 g sugar in a small saucepan. Stir until sugar dissolves. Remove from heat and add 40 g kirsch. Cool completely.

3. Chocolate Sponge Cake:

Preheat Oven: Preheat to 150°C (300°F) (or 170°C/340°F for no fan). Grease only the bottom of two 20 cm (8-inch) cake tins and line with baking paper.

Combine Dry Ingredients: Whisk 150 g cake flour, 50 g cocoa powder, ½ tsp baking powder, and 3 g salt in a bowl.

Whip Egg Whites: In a large bowl, whip egg whites and ½ tsp cream of tartar until frothy. Gradually add 105 g sugar, mixing until glossy.

Whip Egg Yolks: In another bowl, whip egg yolks with the remaining 105 g sugar, 60 g warm water, and 7 g vanilla extract until pale and thick.

Fold Ingredients: Fold 1/3 of dry ingredients into egg yolk mixture. Repeat until all combined. Gently fold in meringue.

Bake: Divide batter between tins. Bake for 30 minutes or until a toothpick comes out clean. Cool in tins for 10 minutes, then transfer to a cooling rack. Once cool, trim each cake in half to create 4 layers.

4. Chantilly Cream:

Prepare Mascarpone: Stir mascarpone cheese in a large mixing bowl to soften.

Whip Cream: Add heavy cream, powdered sugar, and vanilla to the bowl. Whip on medium-high speed until stiff peaks form (about 3-4 minutes). Fold in 20 g kirsch if using.

5. Assemble and Decorate:

Assemble Cake: Place the first layer of cake on a serving plate. Brush with simple syrup. Spread ¼ cup Chantilly cream on top. Pipe a border of cream around the edges. Add 1/3 of the cherry mixture and spread evenly. Repeat layers with remaining cake, cream, and cherry filling.
