Reese's Peanut Butter Cup Roll Delight

Ingredients
For the Crust:
1 1/2 cups chocolate cookie crumbs
1/4 cup melted butter
For the Filling:
3 (8 oz) packages cream cheese, softened
1 cup sugar
1 cup sour cream
1 tsp vanilla extract
3 large eggs
1 cup creamy peanut butter
15-20 Reese's peanut butter cups, chopped
For the Whipped Cream and Toppings:
1 cup heavy cream
1/2 cup chocolate chips
1/2 cup peanut butter chips
Caramel sauce for drizzling
Whipped cream for topping
Instructions
Prepare the Crust:
Preheat your oven to 350°F (175°C).
In a bowl, mix the chocolate cookie crumbs with melted butter until well combined.
Press the mixture firmly into the bottom of a parchment-lined 10x15-inch baking sheet. Set aside.
Make the Filling:
In a large mixing bowl, beat the softened cream cheese until smooth.
Add the sugar, sour cream, and vanilla extract, mixing well until creamy.
Beat in the eggs one at a time, ensuring each is fully incorporated.
Fold in the creamy peanut butter until smooth and well blended.
Gently stir in the chopped Reese's peanut butter cups.
Bake the Roll Cake:
Pour the filling over the prepared crust and spread it evenly.
Bake in the preheated oven for 25-30 minutes, or until the center is set and the edges are slightly golden.
Remove from the oven and allow the cake to cool completely in the pan.
Prepare the Whipped Cream:
In a chilled mixing bowl, whip the heavy cream until soft peaks form. Set aside.
Assemble the Roll Cake:
Once the cake is completely cooled, gently roll it from the short end, using the parchment paper to help guide it.
Place the rolled cake seam-side down on a serving platter.
Add Toppings:
Spread or pipe the whipped cream over the top of the rolled cake.
Sprinkle with chocolate chips and peanut butter chips.
Drizzle generously with caramel sauce for an extra layer of flavor
