Caramel Crunch Cheesecake Fruit Salad

🧾 Ingredients
Creamy Cheesecake Base:
8 oz cream cheese, softened 🧀
½ cup sour cream
¼ cup powdered sugar
1 tsp vanilla extract
2 tbsp caramel sauce
Fruit:
2 cups fresh strawberries, halved 🍓
2 cups green grapes 🍇
Optional: sliced bananas or apple cubes
Crunch Topping:
½ cup crushed shortbread cookies or graham crackers
⅓ cup chopped roasted peanuts 🥜
1 tbsp butter, melted
To Finish:
¼ cup caramel sauce (for drizzling)
Extra cookie crumbs and peanuts for garnish

Prepare the Crunch Topping
Mix crushed cookies, chopped peanuts,and melted butter in a small bowl. Toast in a dry skillet over medium heat for 3–4 minutes until golden and crisp. Set aside to cool.
Make the Cheesecake Cream
In a large bowl, beat cream cheese until smooth. Add sour cream, powdered sugar, vanilla, and 2 tbsp caramel sauce. Beat until fluffy and well combined.
Combine the Fruit
In another bowl, gently mix strawberries and grapes. Add in other fruits if using. Pat dry with a paper towel if overly juicy.
Assemble the Salad
Fold the fruit gently into the cheesecake cream until evenly coated. Spoon into a serving dish or individual cups.
Top & Drizzle
Sprinkle with the cooled crunch topping, drizzle generously with caramel sauce, and finish with a few more cookie crumbs and peanuts for extra texture.
Chill & Serve
Chill for 30–60 minutes before serving for best texture. Serve cold and enjoy every creamy, crunchy, fruity bite.
