Ingredients
For the Beef Filling:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can (4 oz) diced green chilies
1 tsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
Salt & pepper, to taste
1 can (10 oz) red enchilada sauce
1/2 cup corn kernels (fresh, frozen, or canned)
1/2 cup black beans, drained and rinsed (optional)
For the Cornbread Topping:
1 cup cornmeal
1 cup all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup vegetable oil
1 egg, lightly beaten
1/2 cup shredded cheddar or Mexican blend cheese
1/4 cup fresh cilantro, chopped (for garnish)
Sour cream, for serving (optional)
Salsa or hot sauce, for serving (optional)
Directions
Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.
Cook the Beef Filling: In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the diced onion and garlic, and cook for another 3-4 minutes until softened. Stir in the diced green chilies, chili powder, cumin, smoked paprika, salt, and pepper. Add the enchilada sauce, corn, and black beans (if using). Cook for another 5 minutes, allowing the flavors to meld. Remove from heat and set aside.
Make the Cornbread Topping: In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. In a separate bowl, whisk together the milk, vegetable oil, and egg. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheese.
Assemble the Casserole: Spread the beef mixture evenly in the prepared baking dish. Pour the cornbread batter over the top of the beef mixture, spreading it out evenly with a spatula.
Bake: Bake the casserole in the preheated oven for 25-30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
Serve: Let the casserole cool for a few minutes before slicing. Garnish with fresh cilantro and serve with sour cream, salsa, or hot sauce on the side.
