Grilled Aloha Chicken and Pineapple

Ingredients:
4 boneless, skinless chicken breasts
1 fresh pineapple, peeled, cored, and sliced into rings
1/4 cup soy sauce
1/4 cup honey
2 tbsp olive oil
2 cloves garlic, minced
1 tsp fresh ginger, grated
1/4 tsp black pepper
1 tbsp fresh cilantro, chopped (for garnish)
Directions:
In a mixing bowl, whisk together soy sauce, honey, olive oil, minced garlic, grated ginger, and black pepper.
Place the chicken breasts in a large resealable plastic bag or shallow dish, and pour half of the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).
Preheat your grill to medium-high heat. Lightly oil the grill grates.
Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6-7 minutes on each side, or until fully cooked (165°F internal temperature).
While the chicken is grilling, brush the pineapple rings with the remaining marinade and grill them for about 2-3 minutes on each side, until they are caramelized and have nice grill marks.
Serve the grilled chicken topped with the grilled pineapple rings. Garnish with chopped fresh cilantro.
