Colorful Mediterranean Chickpea Salad with Fresh Herbs and Feta
Ingredients:
2 cans (15 oz each) chickpeas, drained and rinsed
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
For the Dressing:
3 tablespoons fresh lemon juice
1/4 cup extra virgin olive oil
1 teaspoon dried oregano
1 clove garlic, minced
Salt and pepper to taste
Directions:
1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, parsley, and mint .
2. In a small bowl, whisk together the lemon juice, olive oil, dried oregano, minced garlic, salt, and pepper to make the dressing .
3. Pour the dressing over the salad and toss gently to combine .
4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld .
5. Serve chilled or at room temperature.
