Balsamic chicken bak with fresh tomatoes


 Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup balsamic vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon dried basil

1 teaspoon dried oregano

2 cups cherry tomatoes, halved

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

1/4 cup grated Parmesan cheese

Directions:

Preheat your oven to 400°F (200°C).

Season the chicken breasts with salt and pepper.

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, minced garlic, dried basil, and dried oregano.

Place the chicken breasts in a baking dish and pour the balsamic mixture over them, ensuring they are well coated.

Scatter the halved cherry tomatoes around the chicken.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

Remove the dish from the oven and sprinkle the fresh basil, parsley, and grated Parmesan cheese over the top.

Let the chicken rest for a few minutes before serving.
